Tim chose cooking as a career because of his love of eating and he knew he wanted to be a chef from a young age! He began his career at Rick Stein’s Seafood Restaurant in Padstow. After a year, Tim decided to move to London to work for Marcus Wareing and was a part of the opening team at his restaurant, The Gilbert Scott. He then took a position with Michel Roux Junior at the 2 Michelin starred Le Gavroche.
After working in London for 2 years, Tim came back to Cornwall to work at Paul Ainsworth at Number 6 and The Driftwood in Portscatho. In October 2016 Tim won South West Chef of the Year Young Professional whilst working again for Rick Stein. In January 2017 Tim started working under Guy Owen, at The Idle Rocks in St Mawes, Cornwall, where he once again won the prestigious award of South Chef Of The Year 2018 he was then promoted to head chef in beginning 2019.
In January 2020 Tim and his wife Terri took over The Barley Sheaf Pub at Gorran, their idea was to open a relaxed pub serving the best quality food and drink in the area. The only way they could achieve this is with the help and support of the fantastic team around them.
Over the course of the Lockdowns and beyond Tim and the team won several awards including The Gold award for best pub of the year at the Cornish Tourism Awards, and entering into the Trenchermans Awards, and the Michelin Guide.
